Sometimes there just isn't enough time to cook a full meal. So I took a shortcut this time. I bought a box of Trader Joe's Six Bean Medley, which is precooked and ready to serve. While at Trader Joe's I also bought a package of pea shoots. I mixed the two together and added chopped onion and cherry tomatoes. I topped it all off with some parsley, lemon juice and olive oil. It was a perfect quick side dish, which I served with Zucchini Tomato Gratin.
