Breakfast Sandwich


Okay, as a holistic health counselor I'm going to tell you that this isn't really the ideal meal to start your day out with. It's full of processed foods and gluten. But as a person who occasionally craves something a little greasy and needs a little bit of comfort food from time to time, I will tell you that this is a really delicious breakfast. I've made it for house guests - vegans and omnivores alike love it.

Here's how to make it: Drain a package of tofu. I usually wrap it in a kitchen towel the night before and leave it in the fridge, and it's ready to use in the morning. Thinly slice the tofu and then marinade in a little bit of olive oil, Braggs Liquid Aminos and apple cider vinegar for a few minutes. Then fry until crispy on both sides. While that's cooking, heat up a few slices of vegan "bacon". I use Lightlife Smart Bacon. For the cheese, you can either melt a little cheese on the tofu while it's cooking, or you can toast your bagel and melt the cheese over it in the toaster oven. I spread a little bit of Earth Balance on both halves of the bagel, then add two slices of "bacon" and two slabs of tofu to each bagel. And then, eat and enjoy!

Raw Sandwich with Coleslaw


Yes, it's another raw sandwich! These are quickly becoming my favorite warm weather meal! The bread is Sunflower Sesame bread from Ani's Raw Kitchen. It's then topped with Sunflower Seed Cheese from RAWvolution and the pesto that was leftover from the stuffed mushrooms I had yesterday. I also added olives, avocado, fresh tomatoes and crispy tomatoes - also left over from yesterday's meal. With the exception of the fresh produce, all of the ingredients used to make this sandwich were leftovers from other meals that I had in my fridge. Preparing raw food can sometimes take a little longer than cooking would, but I like to make things in large batches and store them in my fridge for meals later on. That way prep time over the course of the week evens out!

I served the sandwich with a side of coleslaw. I bought a bag of prepackaged organic coleslaw mix at Whole Foods, and then I made mayonaise from RAWvolution. The mayo is made with cashews, mustard, coconut water, garlic and lemon juice. It was nice and creamy and went well with the coleslaw mix!

Raw Sandwich


This is very similar to the pizza/sandwich I made last week. This time, I made raw bread from Ani Phyo's Raw Food Kitchen. I messed up while mixing it and added too many flax seeds, but it came out just fine anyway. The bread held together nicely and held up to the toppings.


I also made a raw cheddar cashew cheese in the food processor. The orange color comes from a red bell pepper, which is what gives this cheese it's "cheddar-ness". Did you know that most of our taste comes from what we see and smell? If this cheese didn't have the pepper, it would be white and would probably be considered ricotta, and therefore taste more like ricotta.


The bread and cheese together make a great snack! For the sandwich, I topped it with pesto, tomatoes, olives and avocados. I also made some collard wraps with the cheese, sprouts, peppers and zucchini. This was the perfect lunch!
